Gluten-Free Kale Vege Pancake

Kale is a standout in the world of vegetables, both in terms of its price and its nutritional value. Kale has been a superfood for a long time, and even the World Health Organization recommends it as the best vegetable.

A few days ago, I bought two packs of kale 🥬. After a few days of 'effort,' I finally finished one pack. While it's packed with nutrients, it can have a rough texture, so it's not everyone's favorite unless you really need its nutritional value. Otherwise, it's best to mix it with other salad greens.

Last night, my wife made a pot of curry, and following my tradition, whenever there's curry, the next day I make vegetable pancakes for breakfast. This also conveniently helped me get rid of the hassle of the other pack of kale. 😏"

The recipe is as follows (2 servings):

  • Goglufree All Purpose Premixed Flour - 100g
  • Water - 180g
  • Kale - 50g (chopped)
  • Eggs - 1 (can be added to the batter or placed on the pancake)
  • Sugar - 10g
  • Salt - 2g (Optianal )
  • Oil - 5g (recommended rice bran oil or regular olive oil). Extra virgin olive oil is not recommended because it can't withstand high heat and may lead to nutrient loss.

A comprehensive breakfast rich in natural nutrients:

✅ Quality Carbohydrates: Goglufree All Purpose Premixed Flours / Kale
✅ Protein: Egg
✅ Fat: Rice bran oil/olive oil
✅ Vitamins / Fibre: Kale


Steps:

Pour all the dry ingredients into a pan, then mix them evenly.

Next, pour in the oil and water, and then stir thoroughly.

  1. Prepare the quantity of kale (50g) after washing and chop it. Then pour it into the pan and mix it evenly.

  1. After preheating the baking pan, pour in the oil, and then pour the appropriate amount of batter into the baking pan.

6. After frying for 2-3 minutes, flip it, and fry until the surface turns golden brown.

7.After removing it from the pan, you can serve it with some curry sauce or chili sauce and enjoy your meal.
