This is a very important concept.
❌ Gluten-free ≠ Automatically low GI
❌ Gluten-free ≠ Guaranteed stable blood sugar
If a product is made using:
• Refined rice flour
• Fiber-removed flour
• Highly processed starches
Then even if it is gluten-free,
👉 it is still essentially a simple carbohydrate.

What I’ve always emphasized is not simply:
“Can rice be made into bread?”
Instead, the real question is:
👉 Is this bread suitable for everyday eating?
